Troodos villages (traditional clay ovens): Platres, Agros, Kakopetria. €12-18/portion. Ask: "Sto fourno?" (in the oven?). Some restaurants require 24-hour advance order.

Cook at Home

1.5-2 kg lamb shoulder, garlic, salt, pepper, bay leaves, lemon, olive oil, potatoes. Sealed in pan, 160°C, 4-5 hours. Don't open. Result: tender lamb, golden potatoes, aroma filling the house. Serve with choriatiki salad and Commandaria.
