The Cheese That Squeaks
Cyprus's culinary landmark. EU PDO since 2021. Semi-hard sheep/goat milk cheese that doesn't melt. Grill it: golden outside, squeaky inside. That squeak is the unmistakable Halloumi experience.
How It's Made
Traditional: milk heated, curds kneaded, pressed, cooked in whey, filled with mint, folded, brined. Fresh: soft, mild, creamy with honey. Aged: harder, saltier, perfect for grating.

How Cypriots Eat Halloumi
Grilled (1 cm slices, 2-3 min/side + lemon). Raw with watermelon (THE Cypriot summer plate). In pitta (Cypriot fast food, €3-5). In trachanas soup (winter comfort food).
Where to Buy
Supermarket: €5-12/250g. Farmers market: fresher, often cheaper. Direct from producers in Troodos villages. Look for PDO seal. Export halloumi from German supermarkets: doesn't taste like fresh Cypriot halloumi.
